I have a little bulb below the clocks that repeats when I use the indicators, as well as a gauge that tells me the radiator water temperature.

Would you recommend me removing them?

I do have some finely honed disabling skills

I had to look this up but EGT's with a proper , appropriately inserted probe should be no higher that 675°C.

All depends where you stick your probe, mid flow on the collector should roast it, bet you dont see more than 250 on the EGR port.

A well mapped tdi should have fine gas temps, old idi or mtdis rolling coal to make boost are meltdown candidates
Yep meaningless without a gauge that's for sure.

Some info here, for anyone interested.
