I do have a question though.

I want to fit this socket into the side of the cupboard, how do I do it as the faceplate and cover sit flush. Do I cut the hole slightly smaller and kinda do the screws up to that and have the faceplate and cover pinching the wood?

Yes kind of but that's the wrong box really. You need a plasterfix box.
It will have a lip around the edge.
And 2 sliding lips that will clamp it to the cupboard.
